Edible oils and fats play a vital role in the economy of many countries especially Egypt, which is facing a serious shortage in production of edible oils and different fat products especially fat spreads (shortenings and margarine. Canola oil is one of the most important oil seeds crop in the world from the seed has gained an excellent reputation for its nutritional qualities in the human diet, there have been increasing interest in Egypt to canola oil, it will be expanded to be the most a abundant and most economical edible oil in the future. Moreover, canola seeds produced in Egypt in many places it was free erucic acid contained high amount of monounsaturated fatty acids. Palm oil is a versatile raw material for the fats and oils industry, it is easily fractionated into liquid and solid fractions named palm olein and stearin, its content gave the desired consistency and tendency to crystallize in margarines and shortenings blends, and they have a beneficial effects on their polymorphic stability. Phenols are naturally occurring antioxidant substances found in the skins, peels and seeds of many fruits, vegetables and herbs.
Rania El-gammal is a lecturer of science and technology faculty of agriculture mansoura university. She is interested in the field of oil and fats technology and processing from 1997. She teaches different courses belongs to food safety and hygiene. She has published several researches about the quality of higher education in Egypt.
