Known for his game-changing approach to cooking with vegetables, Jeremy Fox first made his name at the Michelin-starred restaurant Ubuntu in Napa Valley. Today he is one of America´s most talked-about chefs, celebrated for the ingredient-focused cuisine he serves at the Los Angeles restaurant, Rustic Canyon Wine Bar and Seasonal Kitchen. In his first book, Fox presents his food philosophy in the form of 160 approachable recipes for the home cook. "On Vegetables" elevates vegetarian cooking, using creative methods and ingredient combinations to highlight the textures, flavours, and varieties of seasonal produce and including basic recipes for the larder.
Jeremy Fox is an award-winning chef. He first made a name for himself at Ubuntu in Napa, California, surprising palates with his full-flavored vegetarian cuisine, and earning the restaurant a Michelin star. Prior to that, he honed his craft and food philosophy as chef de cuisine at the lauded Manresa in Los Gatos, California, under his mentor David Kinch, and staged at several three-Michelin star restaurants in Europe. In 2013, he joined longtime friends Josh Loeb and Zoe Nathan at Rustic Canyon in Los Angeles, California - a fitting partnership considering the restaurant´s neighborhood-driven and farmers´ market-centric ethos. Jeremy is also the executive chef at the family´s newest destination, Esters Wine Shop & Bar, where he created a menu of light dishes to complement over 250 wines. Jeremy is also working on a new restaurant with the group to open in spring 2017.
Noah Galuten is a chef and writer, based in Los Angeles, California, and has written for several publications including LA Weekly and Los Angeles magazine. He was known for many years as the blogger behind Man Bites World and currently works for the Golden State restaurant group.
